-1In my new living situation I’m the main cook for very active (and hungry) people.  I’ve started making energy snacks with some of my favourite ingredients.  They freeze well, which also helps when I’m feeling late preparing the next meal.

If you don’t have a food processor, use oat flour instead of large oat flakes and mash the banana ahead of time.

Ingredients

2 cups of rolled oats
2 teaspoons of cinnamon (I give hefty ones because I loooove cinnamon!)1/2 cup of unsweetened apple sauce
1 ripe banana
1/4 cup of blueberries or other berries
one egg
1.5 tablespoons of peanut butter
1 tablespoon of coconut oil

Begin by pre-heating oven to 350 and greasing pan.  Place the oats and cinnamon in the food processor until ground into a flour.  Add the rest of the ingredients except the berries.  Take out mixture from food processor and mix berries by hand into mixture.

Place on baking pan in either cookie form or roll out and cut into granola bar shapes.  Makes about 12 bars or 15ish cookies. Please note, the texture is very different then a cookie or a granola bar.  It’s sweet, very nutritious without any added sugar!
