The holidays are the rare times I post a dessert recipe. This was a suggestion that a fellow health nut friend gave me when I was discussing the benefits of coconut oil on slowing down memory loss. These truffles are easy to make, require no baking, no melting of chocolate nor any dairy. They are vegan, paleo and chocolate lover friendly. You can omit the nuts if you’re expecting someone with a nut allergy. Enjoy in moderation. Share with friends and family.
Ingredients for 8-10bite sized truffles
1/2 cup of cocoa powder
2 tablespoons of coconut oil
2 tablespoons of nuts or seeds of your choice (hazelnuts and cashews give it a richer flavour)
1/2 a teaspoon vanilla extract
2 teaspoons maple syrup or honey or 2-3 dates
1 tablespoon of unsweetened shredded coconut
In a food processor add nuts and mix until ground finely but not into a butter. Add the rest of the ingredients except the shredded coconut, and mix until it’s a moist even consistency. Mix the coconut by hand into mixture. Place on parchment paper into bite sized pieces. Put in fridge for an hour. These melt easily if they are in a warm room, keep in fridge until served.
