February is the month when many of us crave some comfort food.  A few weeks ago, I was cold, tired and hungry.  I wasn’t in the mood for much cooking or chopping and I wanted something that would warm me and fill me.  I didn’t have much in the house for fresh produce, just sweet potatoes, onions, and eggs.   A whiff of creativity using the almighty food processor, I came up with my new, go-to winter dish.  I call it a Sweet Potato Kugal because it’s the closest name I could find to something similar.  This has less carbohydrates than Potato Kugal because it doesn’t have Potatoes or Matzo meal.  I think it’s way tastier too.

Ingredients

  • 4-5  Shredded Sweet Potatoes
  • 1 cooking onion thinly sliced length wise
  • Spice of choice (I used my favourite Cajun spice mix)
  • 2 tables spoons of Olive Oil
  • 2 eggs

Instructions

Pre-heat oven to 350.  In a greased 14 x 10 inch Lasagna Pan evenly place shredded sweet potatoes mixed with the onion pieces.  Add spice of choice, and evenly coat with oil.  In a separate bowl beat eggs then spread evenly into ingredients in the pan. (use your hands for a more even mixture). Bake for 30 minutes.  Enjoy!

You can cut them into slices when they are cooker or shape them like pancakes before going into oven.
